Ingredients:

  • 1 cup rice

Directions:

  1. Rinse the rice and moong dal together until the water runs clear. Drain and set aside.
  2. In a large pot or pressure cooker, add the rice and moong dal with 3 cups of water. Cook until the rice and dal are soft and the water is absorbed.
  3. In a separate pan, melt the jaggery with 1/4 cup of water. Bring to a boil, and then strain to remove any impurities.
  4. Add the melted jaggery to the cooked rice and dal mixture. Mix well and cook for an additional 5 minutes.
  5. In a small pan, heat the ghee and add the cashews and raisins. Fry until golden brown and add to the pongal mixture.
  6. Lastly, add the cardamom powder and nutmeg powder, and mix well.
  7. Sweet Pongal is ready to be served! Serve it warm, garnished with additional cashews and raisins.
